Turkey and Chicken Leftover Recipes

Turkey Stew

2-3 cups of ground/chopped/minced turkey
2 cloves of garlic , minced (or teaspoon of garlic powder)
2 cans (14.5oz. each) low-sodium stewed tomatoes
2 cups corn
2 tablespoons chili powder
1 tablespoon cumin (or teaspoon if you want it to be less spicy)
8 oz elbow macaroni, cooked
1/4 cup of sliced scallions or onions (and any other veggie you may want to add)

In a 4 quart pot over medium-high heat, mix the turkey and garlic until turkey is hot ... Ad the tomatoes, corn, chili powder, cumin. Bring the mixture to a boil, reduce heat to low and cook for 15 minutes. Ad the macaroni, scallions, and/or veggies and heat thoroughly. Serve with crackers, cornbread or over rice.


Easy Turkey or Chicken Salad

2-3 cups of chopped or minced turkey/chicken
1 cup of mayo
1 cup of finely chopped celery
1/2 cup of finely chopped onions
salt to taste
pepper to taste

Mix well, serve on bread, pita or crackers.


Turkey & Noodle Soup

2-3 cups leftover turkey meat, chopped
2 cans chicken broth
1 garlic clove
3 bags of egg noodle
small bag baby carrots
salt

Put in a crock pot and cook over night on low. Add water if needed.

This is a great way to use your leftover turkey. Chicken would work as well.
