Home-Made Teething Biscuits

Remove the crusts from 5 slices of stale bread.
Cut the bread into fingers.

Put the bread on a baking sheet and bake in a very slow oven at 250 degrees,
for 1 hour or until dry and hard.

Allow to cool and store in an airtight container.

Makes about 20.



Happy Face Sandwiches

Bread, Peanut butter, Raisins,Chocolate chips, Alfalfa or bean sprouts,
squeeze cheese, other small food items.

Spread peanut butter or squeeze cheese on one side of bread - open faced.

Have child make eyes, nose, mouth and hair from other items provided.

Encourage kids to be creative and eat what they create.


Banana Wrap

1-8 inch flour tortilla
2-3 tbsp peanut butter
2-3 tbsp grape jelly
1 small banana, peeled.

Place tortilla on a paper towel. Microwave 10 to 20 seconds on high until the tortilla is soft and warm. Spread with peanut butter. Top with grape jelly. Place the banana near the right edge of the tortilla. Fold up the bottom fourth of the tortilla. Bring right edge over the banana and roll-up.


Peanut Butter Caterpillars

Banana, sliced
2 tbsp peanut butter
Grapes

Spread banana slices with peanut butter and connect the slices.
Add a grape up front for the head ("gluing" with more peanut butter).
If desired, make this a game with the child.
"What veggie can we add to make antennas?" etc. (maybe a strip of celery or carrot.)


Frozen Fruit Treat

1 3/4 cups strawberries 1 large can crushed pineapple
5 bananas (cut in cubes)
12 oz frozen orange juice - concentrate
1 1/2 cups water

Mix ingredients together. Freeze in small paper cups. Serve partially defrosted. Children love this nutritious treat!


Breakfast banana splits

Use oatmeal (or any hot cereal) instead of ice cream

Still use toppings. I use crushed pineapple, strawberry preserves (or (thawed) frozen strawberries) and of course, chocolate syrup and a little whip cream

Of course you make these a size to fit the kids, so they can finish them all, but my kids love it! At least for a change of pace.


Quesadillas

1 6-inch tortilla
Shredded mild cheddar and mozzarella cheese
Cooked, finely chopped broccoli and/or carrots
Cooked, finely chopped chicken

Place 2 - 3 tablespoons of the cheeses on 1/2 of the flour tortilla. Sprinkle with 1 teaspoon of cooked, chopped vegetable of choice. Add 1 teaspoon of finely chopped, cooked meat if desired. Fold in half and microwave about 30 seconds. Let cool and cut into wedges.

Tip: I chop the meat in an electric handy chopper so it is not too chunky.


Mini Pizzas

1 15-oz. bottle pizza sauce (I like Contadina)
1 5-biscuit can of your favorite buttermilk biscuit
Finely shredded mozzarella

Flatten the biscuit on wax paper with a rolling pin until it is about 4 inches in diameter. Sprinkle a cookie sheet pan with cornmeal. Place the flattened biscuit on the pan. Spread about 1 tablespoon of pizza sauce on the biscuit. Add thin slices of yellow and zucchini squash. Dot on a few very small broccoli florets. Hide everything under cheese. Bake in a 400 degree preheated oven for 10 - 12 minutes. Choose any vegetable combination you want.

Let your child make suggestions as to what ingredients to use. Broccoli slaw, available in most grocery produce areas, works well.

You can also hide "pulverized" fresh or frozen spinach in the pizza sauce (about a teaspoon to 1 tablespoon of pizza sauce).

Frozen dinner rolls may be used instead of biscuits.
If you use dinner rolls, thaw them before you roll them out.
Bake them in a 350 degree preheated oven for about 15 minutes.



Sweet Potato Pockets
This is a great vegetable recipe for picky eaters!

1 small can of your favorite buttermilk biscuit
1 large sweet potato, baked
1/4 cup brown sugar
2 tablespoons melted margarine
1/4 cup white sugar with 1 teaspoon cinnamon mixed into it

Bake a sweet potato much like you would a regular white, baking potato.
I use the microwave because it is faster.
Flatten the biscuits much like you would for a mini-pizza. Cut open the cooked sweet potato and scoop out the pulp. Place it in a bowl. Add the melted margarine and brown sugar. Stir everything up with a fork until smooth. Put 1 to 2 tablespoons of the mixture on 1/2 of the flattened biscuit. Fold over the other half and seal with the tines of a fork. Gently roll the pocket in the white sugar/cinnamon mixture. Bake in a preheated 400 degree oven about 12 minutes or until browned. Be sure to let cool before serving. the center will be hot.

You can change these by adding some pulverized, cooked chicken. Add about 1/4 cup to the sweet potato mixture if desired.

You can also add 2-3 tablespoons of raisins, coconut, or both to the sweet potato mixture. Sometimes I have more filling than biscuits. If this happens, spoon heaping tablespoons of filling onto a cookie sheet and freeze. Transfer the frozen filling to a zip lock bag. You can place a scoop of frozen filling on the next batch you make. It thaws out in the oven.


Wiggly Finger Wonderfuls
You can substitute grape juice or cranberry juice for the pineapple and orange juice.

3 packages unflavored gelatin
3/4 cup pineapple juice
1 cup boiling water
1 cup orange juice

Soften gelatin in a little pineapple juice.
Add 1 cup boiling water slowly, stirring constantly until gelatin is dissolved.
Add remaining juices. Pour into 9 x 12-inch pan.
Chill until set.
Cut into finger lengths. Store in covered container in refrigerator.
Makes 72 pieces, each having 4 calories, 3 mg vitamin C and 0 mg sodium.



Banana Smoothie
Make up your own variations using other fruits and juices.

1 small frozen banana, cut in chunks
l/2 cup plain low-fat yogurt
1/4 cup orange juice

Put all ingredients in blender and whirl until smooth. These are fairly thick.
Add more liquid if you want them thinner.
Makes 2 servings, each having 125 calories, 213 mg calcium,
10 mg vitamin C, 7 grams protein, 160 mg sodium.
