Chicken Salad

Ingredients
1/2 cup fat-free mayonnaise
3 Tablespoons low-sodium soy sauce
2 Tablespoons sherry
1/8 teaspoon ground ginger
1/4 teaspoon. pepper
1 cup cooked spiral pasta, drained
2 cups cooked boneless skinless chicken breasts, cut into bite-sized pieces
2 cups fresh snow peas, strings removed and blanched
2 green onions, sliced
1/2 cup water chestnuts, sliced
1/4 cup toasted almonds, for garnish

Directions
In a small bowl combine the mayonnaise, soy sauce, sherry, ground ginger, and pepper. Set aside. In a separate bowl combine pasta chicken, snow peas, green onions, and water chestnuts and toss with dressing mix. Refrigerate overnight. Sprinkle with toasted almonds before serving.



Banana Bread

Ingredients
2 cups all-purpose flour
2 teaspoons low-sodium baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 cups slice bananas (3 ripe bananas)
1 egg
1/3 cup canola oil
2 Tablespoons sugar
1/2 cup unsweetened orange juice
Nonstick cooking spray

Directions
Preheat oven to 350 degree F. Combine the flour, baking powder, baking soda, and cinnamon in a bowl. Stir to blend. Puree the bananas in a blender. Add the bananas and remaining ingredients and mix well. Pour into a loaf pan that has been sprayed with nonstick cooling spray. Bake for 40 to 50 min. Cool on a wire rack.
Makes 1 loaf



Fruit Smoothie

Ingredients
Plain yogurt exchange
Buttermilk exchange
Frozen strawberries, 1/2 exchange
Frozen orange juice concentrate, 1 tsp.

Directions
Blend thoroughly and add enough crushed ice to make a "smoothie." Rarely is extra sweetener requested with this drink and it's especially satisfying on a hot summer day.
